Clutch adjustment

Ford Probe 2.5, 1997.
Reading in the manual, you can adjust the clutch pedal height with the bolt under the pedal, but my garage is saying although it will adjust the pedal height it will not adjust the clutch bite height, is this correct ?. My clutch comes in almost as soon as you lift off the floor, tbh it's not particularly nice & i was hoping adjusting the pedal would bring it up a bit.

It might change it a bit if the fluid was changed, or it was bleed, but I don't know 100%

Fluid was changed today & i'm not picking the car up till monday, so it might of changed a bit.

Good news, they changed the fluid & bled clutch & brakes, both are much better, clutch especially noticeable, more like a normal clutch, much nicer to drive :D
